Last Fri, I was on my way to Sacred Space to work, when it turned out that I didn't need to go in.
So... combine a little time on my hand, with a few zucchinis that needed to be used, plus an invitation for dinner with my good friends Checo and Annie, and the result is a simple, yummy dish, with a flare of the Italian spirit.
Raw Zucchini Pasta w/ Spicy Parsley Tomato Sauce
3 medium zucchini, spiralized (use a vegetable spiralizer)
Spicey Parsley Tomato Sauce
1/2 tomato, or 1/2 cup soaked sun-dried tomatoes
1 clove garlic
1 tsp salt
3 tbsp nutritional yeast
1 bunch parsley, chopped
1/8 cup olive oil
1/4 cup walnuts (I soaked and dehydrate mine)
1/2 yellow pepper
1/4 cup pine nuts
1/4 cup pitted kalamata olives (I didn't have, but optional)
Sprinkle of cayenne pepper (start with 1/8 tsp and add to taste, or substitute for paprika)
Start with spiralizing the zucchini onto a bowl. This is a fun activity, and is sure to get anyone excited. Once you get started, it's neat to see the bowl fill up with noodle like substance.
Add tomato, garlic, salt, 1/2 bunch of parsley, nutritional yeas, olive oil and walnuts to the vitamix, and blend well.
Combine zucchini, yellow pepper, pine nuts and the rest of the parsley, in a bowl and mix well. Add a litlle cayenne to taste and sample.
